Restaurant Pjerin: A Culinary Journey
Restaurant Pjerin invites you on a culinary journey shaped by refined flavours and the timeless beauty of the Adriatic. Named after Marin Držić’s unfinished masterpiece, Pjerin is a tribute to Croatian heritage, artistry, and storytelling.
Welcome to Restaurant Pjerin
At Pjerin, the past, present, and future come together through food. Tradition lives on in recipes shaped by cultural heritage, while the present brings the freshness of carefully sourced local ingredients. Looking ahead, we continue to explore new ways of refining and elevating the dining experience. Together, these elements create a timeless culinary journey, where every plate tells a story.
The experience extends beyond the table. Thoughtfully designed interiors and terraces, shaped by the vision of Arthur Casas and complemented by pieces from Patricia Urquiola and Guido Faleschini, create an atmosphere that is both elegant and inviting — a setting designed to be enjoyed as much as the cuisine itself.

Robert Račić
When did you discover your passion for cooking?
As long as I can remember, I have always had this interest, which later developed into a passion. Even as a young boy, I was happy to help my mother and grandmother in preparing food, watching what they were doing, and peering under the lids to see what was cooking.
What do you like most about your job?
The best thing of all is that I can be creative. I can always explore new flavors and combinations of ingredients, and most importantly, I can learn something new and continuously develop.
What do you consider your greatest professional achievements?
First of all, that would be a happy and satisfied guest.
What made you decide that the Hotel Villa Dubrovnik would be the place to carry out your profession?
Because this is the place where I can continuously develop. I have the freedom to explore and create new things, while I can express my passion in a positive environment. In addition, I have opportunities for education and professional growth.
What makes Pjerin so special compared to other restaurants in Dubrovnik and its vicinity?
The menu, which always reflects the season, so that the dishes are completely fresh and authentic. It is also special in terms of its style of cooking, the excellent service, and superb presentation of local ingredients. In addition, it has a sensational view and an ambience that is hard to compete with.
What ingredients do you like to work with the most?
Fresh fish and various seafood is my greatest pleasure to prepare.
What is your favorite dish?
It is difficult to single out one dish, but I would say that it is sporki makaruli – long narrow pasta with a meat sauce, a traditional dish from Dubrovnik.
What do you like to do when you are not cooking?
More than anything, I like to spend time with my family and I use every free moment for that.
Life motto?
Carpe diem, or Seize the day, or live life while you can.
